I don’t have any super exciting reason for not updating my
blog; my life has been crazy busy with school and work. I had seven tests and eight papers/projects
this past week! Saturday morning I woke
up and did homework literally the entire day from 8 am until midnight! But thankfully, I am past the craziness….at
least until finals week. Most of my
papers and projects are done, so I am feeling pretty happy about that.
So how has everyone been doing?! The weather here has been so cold and it
literally changed overnight. One day I
was wearing a light jacket (and feeling too warm in that) and the next day, we
had a blizzard of snow! It is so
beautiful here; all the trees outside of our apartment are covered in snow and
icicles. I always love the first snow of
the season because it almost feels like I am in a different place
entirely.

Last night I had another test to take so Drew made us dinner
while I studied. He did spaghetti with
a ground beef red sauce. It was
delicious. He even did the dishes after
everything was finished up. Love my boy….

This morning for breakfast, I whipped together this breakfast pudding and loved
it. It was so flavorful and very
chocolate-y. It also has a lot of
protein, which was a perfect complement to my morning yoga work-out.
Hot Chocolate Breakfast
Pudding (Serves 1):
1/2 cup old-fashioned oats
1 cup milk of choice (I used unsweetened almond milk)
1/2 ripe banana (can
sub another fruit, or sugar-free applesauce)
1 packet “Swiss Miss” 25 calorie hot chocolate (this is necessary to get the “hot chocolate
flavor”)
1/2 tsp. truvia (or
other sweetener of choice)
1/4 tsp. vanilla
1/8 tsp. (just a pinch) salt
1 tbsp. cocoa powder
1/2 scoop protein powder
1 tbsp. dark chocolate chips, optional
Garnish: whipped cream and dark chocolate, optional
Directions
Cook the oats, salt, and milk in microwave for 3 minutes. In a blender or food processor, combine the banana with protein powder and hot chocolate packet. Add vanilla, truvia, and 1/2 of the cooked oats in the blender/food processor. Blend again. Then stir in the rest of the oats.

You can blend everything together, but I like having some unblended for
more texture. Stir in the chocolate
chips and whipped topping (optional).
Eat now if you want it hot, or leave it in the fridge to become more of
a pudding consistency. It thickens up
after about 10 minutes, but you could make it at night and leave it in the
fridge overnight.
